Winemaking

Small batches of fruit was sourced from various blocks on the Jaensch’s Vineyard,  all parcels were fermented in open fermenters as whole berries. Hand plunged twice a day for a period of about 10 days and then left on skins for a further 2 weeks before getting pressed in the basket press. The wine was then left to go through malo in a combination of French and American oak and left on lees for 6 months to provide texture and mouthfeel in the finished wine. The wine was then racked and returned back to barrels were it was matured for a total of 18 months before being bottled unfined and unfiltered.

Tasting Notes:

This is a delicate and fresh wine with a fragrant nose with a hint of lightly toasted oak.  Soft and smooth with red fruits and dark cherries on the palate, fine tannins and a great acid structure give this mid-full bodied wine great balance.  A lovely drink and a superb partner to many dishes, I anticipate that over the next 6 years with careful cellaring it will gain even more complexity.
