Winemaking:
Only the best parcels of fruit in the best vintages find their way into Eleazar.
Fruit was sourced from Block 2 on the Jaensch’s Vineyard and fermented in open fermenters as whole berries, hand plunged and left on skins for an extended period before being basket pressed and matured in French and American oak hogsheads. The wine is left to go through malo in the barrels as well as spending 12 months on lees before being racked and returned to barrel. Unfined and unfiltered before going into bottle.
Tasting Notes:
Dense, dark and vibrant from the moment you pour the glass. Fragrant fruit with dark berries, liquorice, mocha and funky oak lurking below all wrapped up in mouth coating tannins. With time in the decanter this wine evolves and gives you an insight into what it has to offer in the future. True to form in only its 4th release it is a great representation of what the Northern Barossa is all about.
