Hand selected parcels of the best fruit from their Northern Barossa vineyard, the wine was made with minimal intervention. Whole berries were fermented in an open fermenter, hand plunged twice a day, extended maceration on skins and then the “cream” cut of the pressings resulted in a single French oak barrel laid down for 18 months
